Combine Mozzarella Cheese, Cheddar Cheese, and Stout Beer for the Perfect Fondue Treat

 

Ingredients:

1 cup grated mozzarella cheese

1 cup grated cheddar cheese

1 12-ounce bottle of stout beer

2 teaspoons of flour or cornstarch

1 garlic clove, finely minced

Salt & pepper to taste

 

Directions:

1. Combine cheese and flour or cornstarch in a large bowl.

     Mix together until cheese is well coated.

     Set aside.

2. Add beer to fondue pot or stovetop pot and heat on high.

     When beer starts to simmer, add all other ingredients.

     Stir frequently to fully mix and prevent lumping.

3. When mixture is well melted, reduce heat to low and                continue to stir.

4. Serve with bread, chips, pits or veggies for dipping. 

 

 

Fred’s Perfect Homemade Pizza

Makes 1 12-inch pizza

 

Ingredients

1 teaspoon of chopped garlic

2 cups of all-purpose flour

2 1/4 teaspoons of active dry yeast

1 teaspoon of chopped rosemary

1 teaspoon of sugar

1 teaspoon of salt

6 tablespoons of room-temperature milk

6 tablespoon of room-temperature water

4 tablespoons of Olive Oil

1 cup marinara or pizza sauce

3 tablespoons of chopped parsley

¾ cups of shredded Ambriola Parmigiano-Reggiano

 

Directions:

1. Preheat oven to 500 degrees F. Allow milk and water to reach room temperature.

2. Combine 1 3/4 cups of flour, yeast, rosemary, sugar, and salt in the bowl of a food processor fitted with a metal blade.

3. In a separate bowl, combine milk, 3 tablespoons of olive oil, and water. With processor running, add flour mixture to milk and water mixture and combine until dough forms. Transfer to a lightly floured surface and knead until smooth and pliant, about 6 minutes.

4. Coat the inside of a large bowl with one tablespoon of olive oil, form dough into a ball, and roll it around bowl. Cover bowl loosely with plastic wrap and a kitchen towel. Let dough rise until it doubles in volume, about 1 hour.

5. Flatten dough and roll out on a lightly floured surface (use remaining 1/4 cups of all-purpose flour) to fit into a 12-inch-round pizza pan or a baking sheet. Cover and let rise for 15 minutes.

6. Mix sauce and 2 tablespoons parsley together. Spread chopped garlic over pizza, leaving a 1/2-inch border. Top with sauce mixture, sprinkle on cheese, and bake 11 to 13 minutes. Garnish with remaining tablespoon of parsley.
